Best recipe ever to go with this: olive oil to coat eggplants 7 Japanese eggplant, ends trimmed, cut into 1-inch wide rounds 1/2 cup toasted pine nuts 3 ounces goat cheese, crumbled 1/3 cup basil, thinly sliced 2 tablespoons chopped mint (I left this out) 3 tablespoons extra-virgin olive oil 3 tablespoons balsamic vinegar salt and pepper Coat eggplant rounds with olive oil,and grill until tender, about 3 to 4 minutes per side. Add all other items and toss, goat cheese last.

Since I was taught my family's salad dressing recipe 7ish years ago, I've been on a constant search for the perfect Balsamic Vinegar. Something bold, yet mellow; bitter, yet sweet. A vinegar that when added to a mix of fresh mozzarella slices, roma tomatoes and avocados, it would sink deep inside every ingredient, complementing each individual taste and never overpowering. Lusciously mellow and complex, this Balsamic is better quality than Balsamics at three times the price. Thick, rich and syrupy, it is great on well aged Parmigiano Reggiano. Or you could just lick it off the spoon, it is that delicious....

We have enjoyed this vinegar for several years, along with the wonderful olive oils. My favorite is to drizzle this over steamed beets, resting on a bed of fresh spinach; then sprinkle Gorgonzola cheese crumbles and then top with toasted pumpkin seeds, fresh ground pepper, optional.

I have been using this product for years! I do a lot of entertaining and I have created many recipes with this product, I wouldn't know where to begin. I have made numerous salad dressings using the vinegar as a base. Another was a balsamic cocoa glaze over homemade mushroom ravioli. It was a huge hit at one of my dinner parties. My guests love my recipes and the secret ingredient is the balsamic vinegar.

For delicious pasta sauce saute your garlic and onion in O&Co olive oil, add tomatoes, oregano, fresh basil and whatever secret ingredients that make your sauce your own then finish with a drizzle of basil olive oil and balsamic vinegar.....everyone will ask your secret

I was introduced to this vinegar about 5 years ago. I am very frugal … ok ... CHEEP, so $34.00 vinegar was hard for me to purchase. My first dish made with it, on a hot summer day, was fresh tomatoes, fresh basil, fresh mozzarella a little salt and pepper and drizzled with olive oil and this vinegar. I WAS SOLD. I never use anything else on any of my salads now. I don’t even know what dressings are sold in grocery stores. And to date I have purchased about 20 bottles as gifts and for ourselves.

This is the best balsamic vinegar around. I particually love using it for dipping bread and then use a great olive oil to dip as well. I also use it for the beef stroganoff to add a little tang!

Our favorite Seattle Salmon recipe: Place a Salmon filet on a water soaked Cedar Plank. To the Filet, apply a very small amount of O&CO Lemon Specialty Olive Oil (use a brush for a nice & light cover), salt & pepper & chopped/fresh Rosemary. Last, drizzle the Balsamic Vinegar over the Salmon & place in a covered BBQ grill. Let this cook on a medium to low temp (depending on Salmon thickness), generally about 15-20 minutes. The flavors are sweet, not too smokey and rich.

It's so weird that last night I found it at Balducci's... and purchased a new bottle...and this AM I got this email!!!! I create a wonderful hors d'oerve with it and it is a big hit!!!Japanese rice cracker,slice of smoked Mozz., fig preserves, with a fresh basil leaf, and a splash of your vinegar! YUM!!!!

This vinegar improves any marinade or garnishing sauce - try marinating your flank steak 1/2 hour before grilling for an amazingly flavorful result. Use 2 tsp. with scallions over a plank cooked salmon. Add some to the mix of tomatoes, basil and oregano in a foil pouch for your grilled tilapia. Two tblsps of both balsamic and light olive oil in a non-stick frying pan helps saute and glaze boneless chicken, sliced celery and cashews - serve warm over cold field greens. Don't miss this balsamic!

This Balsamic vinegar is the most incredible I've evern tasted. I will make any type of salad mouthwatering, even if it's just lettuce, and pairs perfectly w/ all flavors of olive oil. I love putting it on chicken w/ roma tomotoes, basil, and sauteed onions. It adds a sweetness and thickness of flavor that intensifies the chicken's taste and it's so simple! I am a huge fan of this balsamic vinegar and will always recommend it to friends and family.
