Arugula Salad with Apples, Walnuts, and Gorgonzola

Ingredients

  • 12 fresh artichokes or canned artichoke hearts
  • 7 oz Gorgonzola cheese
  • 2 tbsp. O&CO. floral olive oil
  • 3 tbsp. O&CO. Cherry Balsamic Vinegar
  • Black pepper
  • 6 sweet apples
  • 4 stalks of celery, thinly sliced
  • Bunch of grapes
  • 11 oz of arugula
  • Lemon juice
  • 3.5 oz crushed walnuts

Directions

  1. Put 1/3 of the cheese and the olive oil in the bottom of a large salad bowl; mix together. Add the Cherry Balsamic Vinegar and pepper to taste. Mix well to create a thick dressing. Add the apples, the sliced celery, the grapes, the arugula and the lemon juice. Toss to incorporate all the ingredients. Top the salad with the remaining cheese and the walnuts. Toss again gently and serve.
