Balsamic Vinegar & Ginger Pear Red Cabbage

Ingredients

  • 4 strips bacon, crisply cooked & crumbled
  • 2 tbsp. bacon drippings
  • 1/4 cup brown sugar, packed
  • 1/4 cup O&CO. Balsamic Vinegar
  • 3/4 tsp. fresh peeled & minced ginger root
  • 1/4 cup water
  • 3/4 tsp. salt
  • 4 cups shredded red cabbage
  • 1 Anjou pear, cored and chopped 

 

Directions

  1. Heat bacon drippings in a large skillet. 
  2. Stir in brown sugar, vinegar, ginger, 1/4 cup water and salt. 
  3. Add cabbage and pear, stirring to coat. 
  4. Cover and cook over low heat for 15 to 25 minutes.  
  5. For a crisper cabbage, only cook for 15 minutes. 
  6. Turn cabbage into serving bowl and sprinkle with crumbled bacon. *Serves 6
