Cannoli Parfaits


  • 1 cup ricotta cheese
  • 1/2 cup sugar, divided into two ¼ servings
  • 1 ½ tsp. vanilla extract
  • ¾ cup heavy cream
  • Miniature semisweet or dark chocolate chips
  • 1 pkg. O&CO. Tortas
  • 3 cups fresh strawberries, washed and sliced


  1. In a medium bowl, mix the ricotta and ¼ cup sugar and vanilla. 
  2. In a small chilled bowl, beat heavy cream until soft peaks form. 
  3. With a spatula, gently fold the whipped cream into the ricotta mixture. 
  4. Cover and refrigerate.
  5. Toss sliced strawberries with the remaining ¼ cup sugar. 
  6. When ready to serve, layer parfait or wine glasses as follows: strawberries, cannoli cream, chocolate chips. Repeat for as many layer as the dish allows. 
  7. Take 1 torta and break into 4 pieces. 
  8. Stick 2 or 3 pieces into the top of the parfait for scooping cream. Serve immediately.


*Note: Will make 4-6 parfaits. Cannoli cream may be made in advance, up to 2 days before serving.
