Carrot Cake Deluxe

Ingredients

  • 2 cups sifted flour
  • ½ cup sugar
  • 2 tsp. baking soda
  • 1 ½ tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • ¾ cup unsweetened applesauce
  • ¼ cup any O&CO. Floral Olive Oil
  • 3 large eggs, beaten
  • 3 cups grated carrots
  • ¾ cup chopped nuts

Directions

  1. Preheat oven to 350. 
  2. In a large bowl, combine flour, sugar, baking soda, nutmeg, cinnamon and salt.  
  3. In another smaller bowl, mix applesauce, olive oil and eggs. 
  4. Add applesauce mixture to the flour mixture and blend well. 
  5. Add the carrots and mix again. 
  6. Pour the batter into a greased 9x13 baking pan or two loaf pans. 
  7. Bake for 50-60 minutes or until toothpick inserted in the center comes out clean.
  8. Serve with a little powdered sugar sprinkled on top, with freshly whipped cream or with Cream Cheese Frosting.

Cream Cheese Frosting

Ingredients

  • 8 ounces cream cheese, room temperature
  • 8 tablespoons (1 stick) unsalted butter, cut into pieces, room temperature
  • 1 cup confectioners' sugar
  • 1 teaspoon pure vanilla extract

Directions

  1. Place cream cheese in a medium mixing bowl.
  2. Using a rubber spatula, soften cream cheese. 
  3. Gradually add butter and beat with hand mixer until smooth and well blended. 
  4. Sift in confectioners' sugar, and continue beating until smooth. Add vanilla, and stir to combine.
