Chickpea Salad With Chili Oil & Lime

Chickpea Salad

Ingredients

  • 1 can chickpeas
  • 1 zucchini, chopped
  • 4 – 5 tomatoes, cored, seeded & chopped
  • ½ cup scallions, sliced
  • 1 cup cilantro, chopped

Dressing

  • 2 tablespoons lime juice
  • 3  tablespoons O&CO. Chili Specialty Olive Oil
  • ½ teaspoon cumin
  • Zest from 1 lime
  • O&CO. Fleur de Sel & pepper to taste

Directions

  1. Place the chickpeas in a colander & rinse thoroughly, drain well. 
  2. Mix the dressing ingredients. 
  3. Place the chickpeas and zucchini in a plastic container, toss well with the dressing & cover. 
  4. Let the chickpea mix marinate in the dressing at least one hour.
  5. Add the tomatoes, scallions and cilantro to the marinated chickpea mix & stir gently until well combined. 
  6. Season with Fleur de Sel & pepper to taste.
