Pork Chops with Apple Balsamic Sauce

Oliviers & Co's version of pork chops and apple sauce!  These sweet and delicious apple balsamic pork chops are perfect with a side of mashed potatoes.  A great weeknight recipe to have on hand.  Yum!

Pork Chops with Apple Balsamic Sauce


Instructions:

Saute garlic and onions in olive oil over low heat, stirring often, until transparent and slightly golden.

Add wine and vinegar and boil until reduced to about ½ cup, about 8-10 minutes.

Add beef stock and boil until reduced to about 1 1/3 cups, about 15-20 minutes.  Set aside.

Preheat oven to 400 degrees F.  In a large heavy skillet heat 2 tbsp.olive oil.

Sear pork chops until browned on each side.

When all pork chops are seared, place in a baking pan and finish cooking in the oven until chops are fully cooked (155 F on instant read thermometer). 

While pork is roasting, peel and seed apple and cut into thin slices.

Pour off all but 1 tbsp. fat from the skillet and cook apples and raisins until apple is golden and caramelized, about 3 minutes. Add reduced sauce, diced rosemary, and simmer about 1 minute.

Arrange chops on a platter and spoon sauce on top. Serve hot.
