Stuffed Red Peppers with Spiced Chicken & Rice

These beautiful stuffed peppers are filled with a scrumptious chicken and rice mixture with the perfect amount of spice. This recipe can be easily doubled.  A healthy meal that will be enjoyed by all!

Stuffed Red Peppers with Spiced Chicken & Rice

Serves 2-4

  • Ingredients:
  • 2 large red peppers (or any combo of green, yellow, orange), halved and seeded
  • 4 boneless chicken breasts, diced
  • 1/2 cup Basmati rice
  • Freshly grated Parmesan
  • 4 tbsp. O&CO. Spice Mix
  • 10 tbsp. O&CO. Everyday Olive Oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • O&CO. Fleur de Sel Sea Salt
  • Freshly ground pepper

 

Instructions:

Cook the rice until tender, but still firm.

In a large skillet, heat about six tablespoons of O&CO. Everyday olive oil and saute the onions until softened and translucent.  Stir in the O&CO. Spice Mix and diced chicken.  Lower the heat and cook for 10 minutes, stirring occasionally.  Add the rice and cook for another 15 minutes, stirring often.

Remove from heat.  Stir in 1/4 cup Parmigiano-Reggiano, add O&CO. Fleur de Sel Sea Salt to taste and season with freshly ground pepper.  

Stuff each half of pepper with a quarter of the chicken and rice mixture.  Arrange the peppers on a baking sheet and drizzle with the remaining O&CO. Everyday olive oil.  Bake for 25 minutes at 350 degrees.

Serve with a simple green salad.
