Fried beef salad with fresh tomatoes and raw fennel

This salad is a mouth-watering dish perfect for a spring dinner.

Marinated flank steak salad with fresh tomatoes and raw fennel


Instructions:

Drizzle the steak with the Olive & Fresh Thyme Oil.  Add a pinch of salt and pepper to taste. Cover and marinate for about 1 hour.

Slice the fennel bulb with a mandolin and drizzle with lemon juice.  Remove the steak from the marinade and coat with the Salt & Herb Mix for Meat.  Preheat grill or pan to medium-high heat.  Cook the steak about 5 minutes per side, or to desired doneness.

Place the steak on a cutting board to rest for about 10 minutes.  Thinly slice the steak across the grain.  Cut the tomatoes into quarters. Arrange the tomato wedges and fennel onto plates, add the sliced steak and garnish with cilantro leaves.

Add a final drizzle of Olive & Fresh Thyme Oil.
