Arugula Salad with Apples, Walnuts, and Gorgonzola

This delicious jam is so good you'll eat it right off your spoon! This is an excellent replacement for ketchup - eat on burgers or on the side of your dish. Its sweet but not too sweet flavor will keep you craving more.

Arugula Salad with Apples, Walnuts, and Gorgonzola

  • Ingredients:
  • 12 fresh artichokes or canned artichoke hearts
  • 7 oz Gorgonzola cheese
  • 2 tbsp. Agrolaguna Olive Oil 2016
  • 3 tbsp. Cherry Balsamic Vinegar
  • Black pepper
  • 6 sweet apples
  • 4 stalks of celery, thinly sliced
  • Bunch of grapes
  • 11 oz of arugula
  • Lemon juice
  • 3.5 oz crushed walnuts

Instructions:

Put 1/3 of the cheese and the Agrolaguna Olive Oil 2016 in the bottom of a large salad bowl; mix together. Add the Cherry Balsamic Vinegar and pepper to taste. Mix well to create a thick dressing. Add the apples, the sliced celery, the grapes, the arugula and the lemon juice. Toss to incorporate all the ingredients. Top the salad with the remaining cheese and the walnuts. Toss again gently and serve.
