Costal Cianfotta

Ingredients

  • 5 tbsp. O&CO. Everyday Olive Oil
  • 6 cloves garlic 
  • 5 sprigs Thyme & Rosemary
  • Bay leaf
  • 1/2 cup shallots loosely chopped
  • 2 Leeks
  • 2 Potatoes
  • 4 Fairy Eggplants
  • 2 cups chopped tomato
  • 1/2 tsp. O&CO. Herbes de Provence
  • 1 package O&CO. Lucques Green Olives
  • 1½ cup olive oil fried croutons


Directions

  1. Sauté garlic, herbs, shallots, leeks until softened in 3 T olive oil.
  2. Add potatoes and eggplant and cook for 10 more minutes.
  3. Add cherry tomatoes and cook for another 10 minutes.
  4. In a separate pan, fry the croutons in remaining olive oil. 
  5. Serve soup with Parmesan, croutons and a few diced cherry tomatoes.
