Eggplant Caviar

Ingredients

  • 1 9" frozen pie or quiche shell
  • 1 jar of O&CO. Eggplant Caviar
  • 6 large eggs, lightly beaten
  • 2 tbsp. crème fraiche
  • 1/2 cup cream
  • 1/2 cup milk
  • 1/2 package O&CO. Semi-Dried Tomatoes, chopped

Directions

  1. Preheat oven to 350F degrees.
  2. Place pie shell on baking sheet and follow package directions for parbaking. Be sure not to cook the pie shell all the way through and do not allow to brown.
  3. In a large mixing bowl, whisk together all of the ingredients until well combined. Pour filling into pie shell and bake for about 15 minutes, or until center is set.
  4. Serve with side salad.

O&CO is Upfront
