A classic Provençal appetizer that can be used as a spread with crackers and bread, or as the base for a sauce.
Tapenades with Black olives originate from a traditional Provençal specialty. It was originally a simple mixture of capers (tapeno in the Provençal language), anchovies and olives.
Traditional Black Olive Tapenade
Serve tapenade during a cocktail party as an appetizer with: • crackers or on fresh/toasted bread, • 50 % of tapenade/50 % of Olive Oil in a bowl and dip bread or fresh vegetables, • 50 % of tapenade/50 % of Olive Oil in a pan, warm up, add fresh pasta, semi-dried tomatoes, mix and serve!
Traditional Black Olive Tapenade
Black olives (77%), capers, garlic, red wine viengar, anchovies, extra virgin olive oil, balsamic vinegar, salt, pepper.
