Kalamata Black Olives
The most well-known Greek olive with a thick texture and fruity taste without the bitterness.The name, Kalamata, comes from the name of the city, Kalamata (capital of Messinia, Peloponnesus) around which the olives are grown.   Enjoy as an appetizer, or serve over pasta dishes or sauces.  Delicious in salads, especially Greek salads with feta, tomatoes and cucumber.

Aglandau Green Olives

Aglandau Olives are grown in Provence, particularly in the counties of Aix en Provence and Salon de Provence.  They are grown for making both olive oil and green table olives.

Tanche Black Olives
The Tanche olive is considered “the jewel of Nyons.”  It is harvested in the charming town of Nyons, in the South of the Drome Region (between the Rhone and the French Alps), and is candied in brine after being pickled and put in salt (without water) for five to six months.  This is a very mature olive, as it is harvested from mid-December to mid-January, hence the finely wrinkled skin.  Distinguished by their large pits, sweet meaty flavor, and lack of bitterness, Nyons olives are special enough to have earned their own AOC, or Appellation d'Origine Contrôlée (the French system for designating and controlling the geography and quality of wines and other products).Food pairings:  Delicious on their own, or in potato gratin, clafoutis cake, and pissaladiere pie (“Provencal pizza”).
