The Great Chefs: Jacques & Laurent Pourcel

Jacques and Laurent Pourcel, twin sons of a winegrower, began their careers separately before opening Le Jardin des Sens in Montpellier together in 1988. Ten years later a third star rewarded their dual talent with the cuisine from the South of France. With their four hands, they have a talent for producing contradictory flavors, so that in their dishes the contrasts meld together, as when the almond delicately sweetens the bold flavor of a green olive tapenade.
