Lemon Caper Chicken

Ingredients

  • 2 large boned chicken breasts
  • 3 tbsp. O&CO. Lemon Olive Oil
  • ¼ cup flour
  • 2 small packets powdered chicken soup mix
  • 2 tbsp. capers
  • 1/3  cup white wine
  • 1/3 cup water 
  • 2 thinly sliced lemons
  • 9 roma tomatoes
  • ½ medium onion
  • 2 garlic cloves
  • Fresh Thyme, bay leaves, salt and pepper

Directions

  1. Pound chicken breasts, butterfly and cut into 1-inch pieces.
  2. Mix flour and soup mix together, coat chicken with mixture and  sauté in 3 Tablespoons olive  until golden brown on both sides.
  3. Sprinkle chicken with capers.  Add lemon slices, water and wine.
  4. Cover and cook for 20 minutes on low heat.
