The Great Chefs: Michel Del Burgo

After serving as the Executive Chef of the Hotel Bristol and the three Michelin-starred Taillevent, both in Paris, Michel Del Burgo was ready to travel. He has been in Moscow since 2004, as the head of the restaurant Le Duc, where every day he defies space and time to create his menu with the most beautiful ingredients possible from the south of France. While we await his return from the far-off East, Michel Del Burgo has left us with a souvenir of his mastery, this surprising black tapenade with lemon confit, in which the citrus fruit enhances the olive with an acidic note evoking the scent of the southern Mediterranean.
