Mint Chocolate Chip Brownies


  • 4 oz. bittersweet chocolate, chopped
  • 1/3 O&CO. Mint Olive Oil
  • 2 large eggs
  • 1 tsp. vanilla extract
  • ¾ cup sugar
  • ¼ tsp. O&CO. Fleur de Sel
  • ½ cup sifted all purpose flour
  • 2/3 cup semi sweet or dark chocolate bits


  1. Preheat oven to 350 degrees.
  2. Spray 8 inch square baking pan with cooking spray.
  3. Melt the bittersweet chocolate in microwave or in top of a double boiler.
  4. Whisk in mint olive oil and set aside to cool.
  5. Beat eggs and sugar in mixing bowl, using electric mixer, on high for 5 minutes.
  6. Beat in vanilla and fleur de sel. Fold in chocolate, mix well, add flour and mix well again.
  7. Stir in chocolate chips and pour into prepared pan.
  8. Bake for 20-25 minutes until top is dry, shiny and slightly crackled.
  9. Cool completely and cut into squares.
  • Note: Try these with a scoop of vanilla ice cream, drizzled with mint oil on top.
