Olive Oil Mashed Potatoes

Ingredients:

  • 2 lbs. Yukon gold potatoes, rinsed and cut into 2 inch chunks
  • 2 tsp. O&CO. Fleur de Sel
  • 1/3 cup O&CO. Mantinea & Avia Olive Oil

 

Directions:

  1. Place potatoes in a pot of cold water. 
  2. Add salt and bring to a boil.
  3. Reduce heat and cook until potatoes are tender, about 12-15 minutes.
  4. Remove and reserve 1 cup of cooking liquid. 
  5. Drain potatoes.
