The Piment d’Espelette, AOC certified since 2000, is a deep red colored, flavor-packed pepper that grows in a small area in the Basque region of southwest France.
Hand-harvested and often used as a seasoning in lieu of pepper (due to its smoky flavor and mild heat), the Espelette chili's slight spiciness combined with fruity and toasted aromas impart a very distinct flavor to culinary preparations. O&CO's Piment d’Espelette has been produced for almost 10 years by Pierre Gassuan in the village of Ustaritz.

Espelette goes especially well with fish & seafood, such as cod shrimp, or scallops, mild cheeses, omelets, grilled meat, and hearty vegetable dishes.
