Pomegranate, Pear & Blue Cheese Salad


    For Salad:
  • 8 cups mixed baby greens
  • 3 oz. blue cheese or gorgonzola
  • ½ cup pomegranate arils (seeds)
  • 1 large ripe pear
  • ¼ cup sliced almonds

    For Vinaigrette:
  • ¼ cup O&CO. Pomegranate Vinegar
  • 3 tbsp. O&CO. La Cravenco Olive Oil ( or any O&CO. French olive oil)
  • ¼ tsp. fresh cracked black pepper
  • 1 tsp. Dijon mustard


  1. Arrange greens on a decorative platter. 
  2. Slice pear in half, scoop out seeds and thinly slice; arrange pear slices on top of lettuce. 
  3. Sprinkle with pomegranate seeds and crumbled blue cheese. 
  4. Whisk together all vinaigrette ingredients and drizzle over the salad. 
  5. Top with sliced almonds and serve immediately.
