Pork Chops with Apple Balsamic Sauce


  • 1 tbsp. minced garlic
  • 3 tbsp. minced onion
  • 2 tbsp. O&CO. Everyday Olive Oil + extra for sauté
  • ½ cup dry red wine
  • ¼ cup O&CO. Apple Balsamic Condiment
  • 2 ½ cups good beef stock
  • 6 thick pork chops
  • 1 Granny Smith Apple
  • ½ cup golden raisins or dried cranberries


  1. Cook garlic and onions in olive oil over low heat, stirring often, until transparent and slightly golden.
  2. Add wine and vinegar and boil until reduced to about ½ cup, about 8-10 minutes.
  3. Add beef stock and boil until reduced to about 1 1/3 cups, about 15-20 minutes.
  4. Preheat oven to 400.In a large heavy skillet heat 2 tbsp.olive oil.
  5. Sear pork chops until browned on each side.
  6. When all pork chops are seared, place in a baking pan and finish cooking in the oven until chops are fully cooked (155 F on instant read thermometer). 
  7. While pork is roasting, peel and seed apple and cut into thin slices.
  8. Pour off all but 1 tbsp. fat from the skillet and cook apples and raisins until apple is golden and caramelized, about 3 minutes. Add sauce and simmer about 1 minute.
  9. Arrange chops on a platter and spoon sauce on top. Serve hot.
