Shrimp Creole

Ingredients

  • 2 tbsp. O&CO. Everyday olive oil
  • 4 garlic cloves, peeled & minced
  • 2 large onions, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 1 tsp. O&CO. Chili oil  (more if you like spicy)
  • 2 cups good seafood or shrimp stock
  • 1 28 oz. can whole tomatoes in thick puree
  • 1 dash Worcestershire Sauce
  • 1 O&CO. Bouquet Garni
  • Salt & pepper to taste
  • 2 lbs. large shrimp, shelled & deveined

Directions

  1. Heat a heavy Dutch oven over medium heat, add olive oil. 
  2. Cook garlic, onions, celery and green pepper, cook until softened, about 5-7 minutes.
  3. Stir in chili oil.
  4. Add stock, tomatoes, Worcestershire and bouquet garni, season with salt & pepper, simmer about 40 minutes. 
  5. Add shrimp and cook about 5 more minutes until shrimp are bright pink and cook through. 
  6. Remove bouquet garni and serve hot.
