Spicy Basil Shrimp Pasta

Ingredients

  • 2 tbsp. Basil Olive Oil
  • 2 tbsp. Chili Pepper Olive Oil
  • 1 tbsp.butter
  • 2 Garlic cloves, crushed
  • ½ cup chopped basil
  • ½ cup Sun-dried tomatoes
  • 1 large ripe tomato, diced
  • 1 lb. medium shrimp, no veins
  • ¼ cup pecan pieces
  • ½ cup feta cheese
  • Salt and Pepper
  • Pinch of sugar
  • 1 lb. O&CO. Penne Pasta (or other favorite)

Directions

  1. In a large skillet, sauté basil olive oil, chili pepper olive oil and sun-dried tomatoes.
  2. Add diced tomato and simmer for 5 mintues.
  3. Add salt, pepper and sugar to taste.
  4. Add shrimp and pecans, cook over medium heat until shrimp is no longer pink.
  5. Sprinkle feta cheese evenly over mixture and remove from heat.
  6. Immediately serve over pasta and garnish with basil leaves
