Spicy Flatbread Pizza with Chickpea & Almond Delice

Ingredients

  • 1 jar of O&CO. Chickpea & Almond Delice
  • O&CO. everyday olive oil
  • 1 tbsp. O&CO. Chili Specialty Olive Oil
  • 2 soft flatbreads
  • 1 tbsp. garlic, minced
  • 1 eggplant, cubed
  • 1 cup grape tomatoes, halved
  • ½ cup crumbled feta cheese
  • ½ cup slivered almonds, toasted
  • O&CO. Fleur de Sel
  • O&CO. Black Pepper from Madagascar
  • Fresh mint, chopped

Directions

  1. Brush flatbreads with olive oil, and season with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil, and sear flatbread on both sides until golden brown. While still warm, transfer to a serving platter and spread with Chickpea Delice.
  2. Sauté garlic and eggplant in olive oil until tender, 3-5 minutes. Stir in tomatoes and feta, until just warmed through. Spoon cooked vegetables over flatbread.
  3. Drizzle with chili oil. Garnish with toasted almonds and fresh mint.
