Rosaria Pinho, the local mill owner since more than 20 years, knows all the particularities of her land. To the present day, she’s passing on her passion for the profession to her son Cyril. At the beginning of November, the olives are harvested at perfect aromatic maturity, the Verdeal, Madural and Cobrançosa olives are then pressed the same day to guarantee optimal quality. A very artisanal production, all the olives of the estate are cultivated in reasoned agriculture.
