Arugula Salad with Fresh Fig & Pear


  • 4 cups arugula
  • 8 fresh figs, sliced
  • 1 ripe Bartlett pear, sliced
  • 2 tbsp. toasted pignoli or pine nuts
  • ½ cup crumbled Gorgonzola cheese
  • O&CO. Lemon Specialty Olive Oil
  • O&CO. Fig Balsamic
  • O&CO. Fleur de Sel


  1. Divide arugula onto 4 salad plates.
  2. Arrange figs and pears on top of the greens.
  3. Sprinkle salad with a bit of Fleur de Sel and crumble gorgonzola cheese on top.
  4. Drizzle with a bit of the lemon olive oil and a touch of the fig balsamic.
  5. Sprinkle pine nuts on top and serve.

*You can use dried figs if fresh are not available and substitute goat cheese for the Gorgonzola, if you prefer.
