Lemon Ginger Candied Yams
Ingredients:
- 3 lbs. large yams
- ¼ cup butter, melted
- ¾ cups brown sugar, firmly packed
- 2 tbsp. O&CO. Lemon Ginger Specialty Olive Oil
Directions:
- Peel yams and cut into 1 inch cubes.
- Cook in boiling water for 15-20 minutes until cubes are tender.
- Drain yams and put them in a greased baking dish.
- Combine butter, sugar and olive oil and spoon over potatoes.
- Cover tightly and bake for 20 minutes in a 375 degree oven.
- Remove cover and bake for 10 more minutes.
- Remove from oven and let sit for 10 minutes until juice thickens up.
