Lemon Ginger Candied Yams


  • 3 lbs. large yams
  • ¼ cup butter, melted
  • ¾ cups brown sugar, firmly packed
  • 2 tbsp. O&CO. Lemon Ginger Specialty Olive Oil



  1. Peel yams and cut into 1 inch cubes. 
  2. Cook in boiling water for 15-20 minutes until cubes are tender. 
  3. Drain yams and put them in a greased  baking dish.
  4. Combine butter, sugar and olive oil and spoon over potatoes.
  5. Cover tightly and bake for 20 minutes in a 375 degree oven.
  6. Remove cover and bake for 10 more minutes.
  7. Remove from oven and let sit for 10 minutes until juice thickens up.
