Traditional corsica biscuit made in the small town of Apppietto in the region of Cinarca, usually served for breakfast or as a snack, the Canistrelli is an integral part of the Corsican culture. The mix of the dough is made in a kneader, then undergoes a first cooking. Finally the dough is sliced and left for a second cooking which will give the Canistrelli a crisp effect.
