Carrot Cake Deluxe
Ingredients
- 2 cups sifted flour
- ½ cup sugar
- 2 tsp. baking soda
- 1 ½ tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. salt
- ¾ cup unsweetened applesauce
- ¼ cup any O&CO. Floral Olive Oil
- 3 large eggs, beaten
- 3 cups grated carrots
- ¾ cup chopped nuts
Directions
- Preheat oven to 350.
- In a large bowl, combine flour, sugar, baking soda, nutmeg, cinnamon and salt.
- In another smaller bowl, mix applesauce, olive oil and eggs.
- Add applesauce mixture to the flour mixture and blend well.
- Add the carrots and mix again.
- Pour the batter into a greased 9x13 baking pan or two loaf pans.
- Bake for 50-60 minutes or until toothpick inserted in the center comes out clean.
- Serve with a little powdered sugar sprinkled on top, with freshly whipped cream or with Cream Cheese Frosting.
Cream Cheese Frosting
Ingredients
- 8 ounces cream cheese, room temperature
- 8 tablespoons (1 stick) unsalted butter, cut into pieces, room temperature
- 1 cup confectioners' sugar
- 1 teaspoon pure vanilla extract
Directions
- Place cream cheese in a medium mixing bowl.
- Using a rubber spatula, soften cream cheese.
- Gradually add butter and beat with hand mixer until smooth and well blended.
- Sift in confectioners' sugar, and continue beating until smooth. Add vanilla, and stir to combine.
