Cheese & Herb Bread Pudding


  • 11 cups good day old bread, cut into 1-inch cubes (sourdough, French, Italian, focaccia, peasant bread etc.)
  • 6 cups warm milk 
  • 3 eggs
  • 2 tbsp. O&CO. Olive Oil (floral, robust or specialty, depending on your preference)
  • 1 ½ cups grated cheese (cheddar, aged swiss, gouda, etc.)
  • 1 tbsp. O&CO. Herbes de Provence


  1. Preheat oven to 350. 
  2. Lightly grease a 9x13 pan, fill pan with bread cubes. 
  3. In a medium bowl, whisk together the eggs, warm milk, cheese and herbs. 
  4. Stir bread a little bit to make sure all cubes are coated with mixture, let sit for 15 minutes. 
  5. Bake for about 40 minutes, remove and sprinkle top with Parmesan cheese. 
  6. Put the pan back in the oven and bake until the top is golden brown, about 15 minutes more, serve warm.


*Note: you can also add other herbs or cooked veggies.
