Citrus Fruits with Lemon Olive Oil
Ingredients
- 3 oranges
- 3 grapefruits
- 2 tbsp. candied lemon peel, thinly sliced
- 4 tbsp. O&CO. Lemon or Green Lemon Specialty Olive Oil
- 10 fresh mint leaves, finely chopped
- 3 tbsp. light brown sugar
Directions
- Peel the oranges and grapefruit and remove the pith, then separate into segments and remove any remaining white skin.
- Quickly sauté the slices of lemon peel and the orange and grapefruit segments in olive oil for no longer than 1 minute.
- Place the citrus segments in a salad bowl, add the fresh mint and mix gently. Top with lemon olive oil and sprinkle with light brown sugar.
- Chill at least an hour before serving. Garnish with lemon zest and serve.
