Vegetable Tart

For the dough:

  • 1 3/4 cups all-purpose flour
  • 1 stick, plus 2 tbsp. cold unsalted butter, cut into cubes
  • 1/2 tsp. salt
  • Freshly ground pepper, to taste
  • 1 tsp of sugar
  • 1 egg
  • 6 tbsp. water
  • 1 tbsp. Premium Balsamic Vinegar of Modena


Preheat the oven to 400°F.

Pour the flour, butter, salt, pepper and sugar into a bowl and knead. Add egg yolk, water and vinegar, and mix until you form a ball with the dough. Refrigerate for about 30 minutes, or until firm. Next, roll it out on a floured work surface and place in the baking tin lined with parchment paper.   Pierce with a fork.

Mix the egg white with the olive paste and spread over dough. Add the cherry tomatoes, feta cheese. Season with the selected herbs, salt, pepper and a little sugar. Drizzle a few drops of olive oil and vinegar. Cook for 40 minutes in the oven. Serve warm or at room temperature.
