A recipe for cold days to stay warm with greens.
Broccoli Soup
- 2 tbsp Oliviers&Co Everyday Olive Oil
- 1 tsp Oliviers&Co Black Truffle Oil
- 1 teaspoon Oliviers&Co Truffle Salt
- Oliviers&Co Herbs & Salt Mix for Pasta and Salad (and soups!)
- 4 shallots
- 1 bunch of broccoli
- 25 fl oz of vegetable broth
Instructions:
Pour 2 tablespoons of Everyday Olive Oil into a saucepan.
Cut 4 shallots into small pieces and fry for 15 minutes.
Add a bunch of broccoli cut into pieces.
Add a pinch of mix salt and pepper mix.
Add 25 fl oz of vegetable broth into the pot. Let it simmer for 15 minutes on medium heat.
Use immersion blender to run it smoothly.
Finish with Oliviers&Co truffle Oil and Truffle Salt.
