
Hummus is THE perfect Meditarrenan appetizer consisting of grilled smashed chickpeas with Olive Oil, here twisted with Avocados and Tomato Powder. Enjoy with Friends and Family.
Hummus chickpeas and avocados
- 2 tbsp of Oliviers&Co Summer Olive Oil
- Oliviers&Co Tomato Powder
- Oliviers&Co Ciappine with olives
- Oliviers&Co Salt from Camargue
- 1 an of chickpeas (1 lb)
- 2 ripe avocados
- 1 garlic clove
- Lemon juice (1 lemon)
- Freshly ground pepper
Instructions:
Peel and pit the avocados, cover lightly with lemon juice, put them in a blender bowl with the chickpeas (set about twenty aside) and their water, lemon juice, 2 tbsp. of organic Summer Penarrubia Olive Oil, garlic, salt and pepper.
Blend, adjust the seasoning if necessary. Set aside in a bowl in the fridge.
Meanwhile, grill the rest of the chickpeas in a baking dish for 30 min at 220°C or until they’re completely crisp.
Pour them over the hummus, cover with a drizzle of Monva olive oil sprinkle some Tomato Powder and serve with mini ciappine and crudités for dipping (carrots, cucumbers, etc.)
