These cookies are deliciously moist and sweet!  The Fig & Melon fruit spread adds the perfect touch to these irresistable and good-looking sweet treats.  Delicious with a hot cup of tea or coffee.

In a large bowl, mix the butter with both sugars & the vanilla into a creamy mixture.

Blend in the egg and whisk again.

Add the flour and the baking powder, combine all ingredients & mix well to obtain a consistent paste. Add the olive oil.

Place the dough on the floured work surface and roll out about 1/4 inch thick.

Cut out cookies with a 4-inch diameter heart-shaped cookie cutter & place on a baking tray covered with parchment paper.

Cut out a small hole (with a 1 inch cookie cutter) in the middle of the cookies.

Preheat oven to 350° & bake 8-10 min. (the cookies are cooked when the edges start to brown), set aside to cool on a rack. Place 1 tbsp. of Fig & Melon Fruit Spread on half of the biscuit, cover with the other half applying a little pressure to weld the edges then set aside for 1 hour before serving.
