Peach, melon and “brousse d’été” cheese Salad

Peach, Melon and “brousse d’été” cheese Salad

At Oliviers&Co:

 

At the market:

  • 4 yellow or white peaches
  • 2 sweet and fragrant melons
  • 1 tbsp. of lavender honey
  • 200 g of “brousse d’été” cheese (white and lumpy whey cheese)
  • Drained juice of half a lemon
  • A few mint leaves

 

Instructions:

Cut the melon and nectarine pulp into strips and place them onto six small plates. In a bowl, mix the lemon juice and 2 tbsp. of the Grapefruit Vinegar with the honey, add 4 tbsp. of Olive & Orange Organic Olive Oil and a pinch of Salt from Camargue.
Arrange the drained and crumbled brousse on the plates, pour the sauce over and sprinkle with chopped mint.
