Raspberry Ice Cream Sandwiches

A sweet recipe for yoghurt ice cream sandwich with raspberry, lemon cream & cinnamon

Raspberry Ice Cream Sandwiches

  • 1 teaspoon Oliviers&Co Lemon Curd
  • 1 1/2 cups of flour
  • 1 egg
  • 1 stick soft semi-salted butter
  • 1 cup whole cane sugar
  • 1 teaspoon natural liquid vanilla extract
  • 1 teaspoon baking soda
  • 1 cup oat flakes
  • 2 pinches of cinnamon
  • 1/2 cup of fresh raspberries
  • 1 teaspoon sized scoops of yoghurt ice cream


Mix the sugar with the egg in the bowl of a food processor. In a bowl, combine the flour, oats, baking soda, cinnamon, vanilla & pour the mixture in 3 batches into the bowl of the food processor, beating constantly. Add the soft butter & blend until smooth. Let stand 30 minutes in a cool place wrapped in cling wrap.

Preheat the oven to 350°F. Form balls of dough & place them on a baking sheet covered with parchment paper, spacing them about 1-2 inches apart. Bake them 10 minutes, the cookies cook quickly, they must still be soft to the touch.

Remove them from the oven & place them gently with a spatula on a rack to cool. Crush the raspberries slightly & mix them with ice cream. Place 1 teaspoon of lemon curd & 1 teaspoon of ice cream between 2 biscuits, press down well. Enjoy immediately or place them in the freezer & take them out 10 minutes before serving. For a change, yoghurt ice cream can be replaced by an olive oil ice cream, to discover!
