Impress your guests when you serve these fancy and colorful French macarons at your next dinner party with this simple fool-proof recipe featuring Oliviers & Co's three sweet spreads - with chocolate, pistachio, and orange mandarin as the perfect fillings. Each bite is an amazing treat. Yum!

Macarons a L'Oliviers & Co

Makes 30 cookies 

 

Instructions:

Preheat oven to 280 degrees F.  Line baking sheets with parchment paper.

Sift the confectioners' sugar and almond flour in a bowl and whisk together. Beat the egg whites with salt in a metal bowl with an electric mixer on medium speed until foamy, about 1 minute.  Increase speed to high and gradually beat in superfine sugar, 1 tablespoon at a time, until the egg whites are glossy and hold stiff peaks, 3 to 5 more minutes.

Gently fold almond flour mixture into whipped egg whites until thoroughly incorporated.  Divide the meringue into three separate bowls to color and flavor with a few drops of food coloring, if desired.  Color one-third orange, one-third light green, and one third pink.

Spoon meringue into a pastry bag fitted with a 3/8-inch tip.

Pipe 1-inch disks of meringue onto the prepared baking sheets, spacing cookies 2 inches apart.  Let the cookies stand at room temperature for about 15 minutes, until the shiny surfaces become dull and a thin skin forms.

Place the baking sheets in the preheated oven and bake with the oven door open slightly, about 15 minutes.  Let cookies cool completely.

Spread half the pink cookies with Oliviers & Co Wild Strawberry & Balsamic Fruit Spread and top with remaining cookies to make sandwiches. Spread half the green cookies with Oliviers & Co Suprême Sweet Pistachio Spread and top with remaining cookies to make sandwiches. Spread half the orange cookies with Oliviers & Co Orange Marmalade and top with remaining cookies to make sandwiches.

Refrigerate at least 2 hours to let the cookies soften.
