
This tasty Orange Green Lemon Olive Oil cake is a perfect centerpiece to any brunch table. The olive oil prevents the cake from tasting overly sweet.
Green Lemon Olive Oil Cake With Mango Orange Glaze
- O&CO. Everyday Olive Oil
- 1 ½ cups flour, plus more for the pan
- ¾ cup cornmeal
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon finely ground sea salt
- ¾ cup O&CO. Green Lemon Specialty Olive Oil
- ¾ cup buttermilk
- 2 large eggs
- 1 ½ cups sugar
- ¼ cup O&CO. Mango Fruity Condiment
- ¼ cup orange juice
Directions:
Heat the oven to 350 degrees. Oil an 8” X 4” loaf pan with Everyday Olive oil & dust with flour, tap out the excess.
In a large bowl, whisk together flour, cornmeal, baking powder, baking soda & salt.
In a medium bowl, whisk together Clementine & Green Lemon Olive Oil, buttermilk, eggs & 1 ½ cups sugar. Add to the dry ingredients & mix until just combined.
Transfer the batter to the prepared pan & bake until golden brown & a toothpick inserted in the center comes out clean, 55 – 60 minutes.
Let cool for 30 minutes in the pan, then transfer to a wire rack & let cool completely.
Meanwhile, heat the Mango Condiment and orange juice in a small saucepan. Bring to a boil & reduce until slightly syrupy. Brush over the top & sides of the cake.
Serve with a dollop of mascarpone & fresh diced mango.
