Roast Pork with Apples & Cherry Balsamic

An easy, succulent pork roast recipe with apples and potatoes. The Rasperry Specialty Vinegar is the secret ingredient adding a sweet glaze to the pork.  Serve with a side of your favorite green bean recipe for a delicious meal for your family or friends.

Roast Pork Tenderloin with Apples & Raspberry Vinegar


Preheat the oven to 375°F. Season pork with salt and pepper. In a large roasting pan, heat the Oliviers&Co Everyday Extra Virgin Oil over medium-high heat and brown the pork on all sides.

Meanwhile, in a saucepan, mix together the veal stock and 6 tbsp of the Oliviers&Co Raspberry Vinegar. Pour the mixture over the pork, add the potatoes to the pan and roast until an instant-read thermometer inserted into the center of the meat registers 140-150°F, about 30 min- 1 hour.

Add the apples, the garlic and the Oliviers&Co Olive & Fresh Thyme Oil and cook for the last 15 to 20 minutes.

Take the pork out of the oven and keep warm. Collect the cooking juice, boil and reduce it in a sauce pan at medium heat. Add the corn flour mixed with the water and mix until it becomes thick. Season with Oliviers & Co Fleur de Sel and pepper to taste.

Serve the roast with potatoes and apples, drizzle juice and remaining 2 tbsp of Raspberry Specialty Vinegar to finish.
