Enjoy fresh-from-the-garden flavor in this meatless entree.

Tortellini with squash


Mix flour, eggs & Oliviers&Co Everyday Olive oil into a bowl & mix into a smooth dough

Cover with plastic foil & leave in the fridge for an hour while making the filling

Melt the butter on low heat, add squash & whisk until golden brown. Season with chopped mint leaves & Oliviers&Co Grand Cru Olive Oil

Pour & heat up the water in a saucepan

Add all remaining ingredients & apply low heat for about two hours, then strain

Take out the tortellini dough, sprinkle your rolling surface with flour & roll it into a thin sheet. Cut out 7x7 cm squares, fill each square with the filling & wrap the edges closed. Boil the tortellini’s in the water for about 2 minutes.

Place tortellinis on a plate, pour over two tablespoons of Oliviers&Co Grand Cru Olive OIl & sauce.

Season with lemon zest. Try a few drops of Hazelnut Olive Oil to add peps!
