Bread-free Eggplant Pizza

A simple, fresh and delicious way to enjoy a meal with friends and family!

Tomato & Mozzarella

At Oliviers&Co:

 

At the market:

  • 2 eggplants
  • 300 g of mozzarella
  • Some cherry tomatoes
  • 100 g of freshly grated Parmesan cheese
  • Oregano
  • Fleur de sel
  • Freshly ground pepper

Instructions:

Preheat the oven to gas mark 210°C. Remove the ends of the eggplants and cut them into half-centimetre slices. Place them on a baking tray covered with baking paper. Drizzle with olive oil, salt and pepper, sprinkle with oregano and bake for 10-12 min then remove them from the oven. Increase the oven temperature to gas mark 230°C. Using a teaspoon spread a little Genovese pesto, place a slice of mozzarella and half a cherry tomato in the centre, sprinkle generously with parmesan and oregano, add a few black olives, salt (not too much) and pepper. Drizzle with olive oil and return to the oven for 10 min, making sure that it browns without burning. Enjoy straight from the oven or warm with a salad.
