Pear, crispy smoked duck breast fillet and nut salad

Servings: 6

At Oliviers&Co:

 

At the market:

  • 400g of mixed salad leaves
  • One Jar of Fig Chutmey
  • 2 ripe but firm pears
  • 100 g of sliced drained and smoked duck breast fillets
  • One lemon (juice)
  • Salt
  • Freshly ground pepper

Instructions:

In a very hot pan, without fat, brown the slices of dried duck breast scarcely, 1 to 2 minutes.

Peel the pears, cut them into thin slices and sprinkle them with lemon juice. Mix the salad leaves, season with Olive Oil, Fig Chutney, vinegar and salt.

Arrange onto 4 plates and add the slices of crispy duck breast, the sliced pear and the walnuts. Add a few touches of fig chutney to finish. You can add small diced sheep milk cheese.
