Tomato & Mozzarella Baguette
Serves 4
- Ingredients:
- 1 loaf fresh bread, such as a baguette
- 1 lb. fresh mozzarella, sliced 1/4 inch thick
- 2 large thinly sliced tomatoes
- 1/2 small red onion, thinly sliced
- 12-16 oz. spring mix lettuce
- 2-4 tbsp. O&CO. Olive & Basil Oil
- 2 tbsp. O&CO. Premium Balsamic Vinegar
- Salt from Camargue
- Freshly ground pepper
Instructions:
Split the loaf of bread lengthwise. Drizzle each side of the bread with O&CO. Olive & Basil Oil. Layer the tomatoes across half of the bread. Sprinkle with Salt from Camargue and freshly ground black pepper. Add a layer of the sliced red onion and evenly drizzle with remaining oil and O&CO. Premium Balsamic Vinegar.
Add the mozzarella and spring mix. Put the top of the baguette on the sandwich, then wrap tightly with plastic wrap. Refrigerate for 2-4 hours before serving. Cut into thirds or in quarters.
