Tomato and Mozzarella Baguette

So simple and so summery, with no cooking required!  You can't go wrong with this combination of ripe tomatoes, basil and mozzarella.   The tastiness of this recipe is directly proportional to the freshness of the ingredients, so save your best tomatoes for this summer treat.

Tomato & Mozzarella Baguette

Serves 4



Split the loaf of bread lengthwise.  Drizzle each side of the bread with O&CO. Olive & Basil Oil.  Layer the tomatoes across half of the bread.  Sprinkle with Salt from Camargue and freshly ground black pepper.  Add a layer of the sliced red onion and evenly drizzle with remaining oil and O&CO. Premium Balsamic Vinegar.

Add the mozzarella and spring mix.  Put the top of the baguette on the sandwich, then wrap tightly with plastic wrap.  Refrigerate for 2-4 hours before serving.  Cut into thirds or in quarters.
