Potato Salada a la Mediterranean

Potato salad meets egg salad in this Mediterranean-inspired twist of the classic potato salad.  Perfect for a picnic or potluck.  You can easily double the ingredients if you're serving a crowd.

Mediterranean Potato Salad

Serves 4-6



Peel the potatoes and cook in a large pot of boiling salted water, until fork-tender.  Drain and set aside.

Peel and coarsely chop the hard boiled eggs.  Wash and dry the lettuce and shred the leaves into large strips.  Cut the potatoes into large slices.

In a large bowl, layer the romaine lettuce, potato slices and eggs.  Toss lightly with Oliviers&Co. Mayonnaise, until all the ingredients are coated.  Sprinkle with Oliviers&Co Sel de Camargue and black pepper to taste.  

Season your salad with Oliviers&Co Finca La Gramanosa Extra Virgin Olive Oil.

Serve either warm or at room temperature.
