
This colorful salad is a tasty appetizer to share with your family, or as a meal by itself. The fruit and nut combination makes for a light salad that everyone will enjoy.
Pomegranate, Pear & Blue Cheese Salad
- Ingredients for Salad:
- 8 cups mixed baby greens
- 3 oz. blue cheese or gorgonzola
- ½ cup pomegranate arils (seeds)
- 1 large ripe pear
- ¼ cup sliced almonds
- Ingredients for Vinaigrette:
- ¼ cup Oliviers&Co Pomegranate Specialty Vinegar
- 3 tbsp. Oliviers&Co Italian Grand Cru of your choice
- ¼ tsp. fresh cracked black pepper
- 1 tsp. Dijon mustard
Instructions:
Arrange greens on a decorative platter. Slice pear in half, scoop out seeds and thinly slice; arrange pear slices on top of lettuce. Sprinkle with pomegranate seeds and crumbled blue cheese. Whisk together all vinaigrette ingredients and drizzle over the salad. Top with sliced almonds and serve immediately.
