Place potatoes in a pot of cold water. Add salt and bring to a boil. Reduce heat and cook until potatoes are tender, about 12-15 minutes. Remove and reserve 1 cup of cooking liquid. Drain potatoes.
Smash the potatoes with a fork, adding smoothly 3 tbsp. of butter, finish with a stick mixer to avoid potatoes chunks, add the Château Virant Olive Oil.
Add salt to taste.
