Costal Cianfotta
Ingredients
- 5 tbsp. O&CO. Everyday Olive Oil
- 6 cloves garlic
- 5 sprigs Thyme & Rosemary
- Bay leaf
- 1/2 cup shallots loosely chopped
- 2 Leeks
- 2 Potatoes
- 4 Fairy Eggplants
- 2 cups chopped tomato
- 1/2 tsp. O&CO. Herbes de Provence
- 1 package O&CO. Lucques Green Olives
- 1½ cup olive oil fried croutons
Directions
- Sauté garlic, herbs, shallots, leeks until softened in 3 T olive oil.
- Add potatoes and eggplant and cook for 10 more minutes.
- Add cherry tomatoes and cook for another 10 minutes.
- In a separate pan, fry the croutons in remaining olive oil.
- Serve soup with Parmesan, croutons and a few diced cherry tomatoes.
