Rustic Fig Tart
Ingredients:
- 1 dozen ripe figs, washed and sliced to 1/2 inch slices
- ½ cup O&CO. Confiture of Fig & Melon
- 1 recipe of your favorite pie crust (refrigerator pie crust works fine)
- 1 egg, beaten with 1 tbsp. water to glaze the crust
Directions:
- Preheat oven to 375.
- Roll out pie dough between 2 sheets of waxed paper or on a lightly floured surface.
- Roll into a 12 inch circle.
- The shape does not need to be perfect, as this is a rustic tart.
- Peel off wax paper and transfer dough to a baking sheet lined with parchment paper.
- Spread jam in the middle of the crust, leaving a 2 inch border all the way around.
- Line the figs on the top of the jam and gently roll the edge of the crust over the outer layer of figs to form the tart.
- With a pastry brush, coat the crust with a little egg wash.
- Bake the tart for 35-40 minutes or until the crust has browned and the juices are bubbling.
- Allow to cool and serve with vanilla ice cream, whipped cream or marscapone cheese mixed with a little honey.
