Rustic Fig Tart

  • 1 dozen ripe figs, washed and sliced to 1/2 inch slices
  • ½ cup O&CO. Confiture of Fig & Melon
  • 1 recipe of your favorite pie crust (refrigerator  pie crust works fine)
  • 1 egg, beaten with 1 tbsp. water to glaze the crust

  1. Preheat oven to 375.
  2. Roll out pie dough between 2 sheets of waxed paper or on a lightly floured surface.
  3. Roll into a 12 inch circle.
  4. The shape does not need to be perfect, as this is a rustic tart.
  5. Peel off wax paper and transfer dough to a baking sheet lined with parchment paper.
  6. Spread jam in the middle of the crust, leaving a 2 inch border all the way around.
  7. Line the figs on the top of the jam and gently roll the edge of the crust over the outer layer of figs to form the tart.
  8. With a pastry brush, coat the crust with a little egg wash.
  9. Bake the tart for 35-40 minutes or until the crust has browned and the juices are bubbling.
  10. Allow to cool and serve with vanilla ice cream, whipped cream or marscapone cheese mixed with a little honey.
